This recipe is a bit time consuming, but the end product is worth it. You'll need 5 large lemons, 1 quart of boiling water and one-half pound of sugar cubes. Wash the lemons well, then rub the sugar cubes over the rinds. Really grind the cubes into the skins to extract as much lemon oil as you can. The color of the cubes will change from yellow to almost a sooty grey when it has absorbed a lot of the oil. Grate the rind of 3 of the lemons.Cut all the lemons in half, and juice them well. One of the presser-types of juicers works better than a reamer-but use what you've got. Put the sugar cubes, grated rind, and juice in a pitcher and add the boiling water. Be careful if it's a glass pitcher, you may want to let it sit with a couple of cups of the boiling water to warm it first. Stir well, cool to room temp. then refrigerate. OR pour over ice in a BIG glass. If it's too strong to your liking [AS IF...] you can add some more water.Once you've tasted this, everything else pales in comparison. I've tried streamling the recipe by grating all the rind and whizzing it with sugar in a food processor. Nada! Used lemon oil to bypass the tedious sugar cube extraction. Flavor just wasn't there. I believe I get invited to summer barbecues simply because of my lemonade. As I said, it is a lot of work, so be sure and keep some for yourself! Have fun. |
