This sounds ok to me but I thought I'd run it past you guys before I try it. I'm not really experienced with quilting.
I'm going to make placemats with different fabrics on one side than the other. One side I want to stipple and the other side echo-quilt -- then put them together wrong sides together and bind the edges.
Do you think they might be too thick? Should I use heavy interfacing or low loft batting? Or should I forget it and just stipple through both layers?
Waddaya think ladies?

The placemat may be thick, perhaps you can use the natural batting as its only 1/4" in thickness, you would need to back it with something before stippling one piece of the mat.Of course you could also use flannelet fabric, which would be even better for what you want to do.Pre-wash it first! This would be the best reute to take and save lotsof bulk.
If at first you don't suceed, try-try again!
