I have started making dips and such for summer eating. What do you do for a nice change from the same old stuff in this nice weather. I love smoothies and fruit drinks too. Yum. MaryW

I love summer with all the raw veggies I can eat.. I make dips , salad dressings, etc.. from scratch so I can have them low fat and without all the sugar that the commercial ones have.. I wish someone would wise up and make them low fat and no sugar...I know they add sugar for flavor and that just ruins it for me.. I hate sweet tasting dressings.. It would be nice to buy one and not have to make it..I believe I could live almost indefinitly on tomatoes, cucumbers, yellow squash, zucchini , green onions, carrots, spinach and various other salad greens, herbs , a touch of olive oil and lots of vinegars and lemon juice and some spices.. What a feast ! ! Sew With Love

Well, LeapFrog Libby, you and I could eat at each other's houses anytime...sounds like we like the same kind of food. I love to experiment with veggies on the BBQ too. I take a small eggplant, cut in half (or in 3 if too thick), lightly mist with olive oil and BBQ til almost done. Add the salt & pepper and a thin layer of spegetti sauce, a little parmesean and some veggie mozerella cheese and cook til cheese melts. Delicious. I hate commercial dressings too but our grocery store, Zehrs, sells President Choice dressings. My favorites are raspberry vinargette and tomato basil...both low fat no sugar. Violet I've decided to live forever - so far, so good.

from www.londas-sewing.com 3-5's 3 lemons 3 oranges 3 bananas 3 cups water 1 can crushed pineapple 1 (or less) cups sugar microwave the oranges and lemons for 30 sec - then cut in half and juice on a juicer thing - pick out seeds. Dump in a bowl. Moosh bananas. Add in - add everything else. Stir up. Put in a container and freeze. Optional: whip when partially frozen (I do this if serving to company) then re-freeze. Take out about 20' before wanting to dish up. Stick a mint leaf in to make pretty when serve with a pretty little cookie. Uhmmm, ummmmm - good! MaryW

If you want nice flavor to anything use sea salt instead of the regular. Much better for you as well. |

ROFLMBO!!! What a nice sight that would be!!! Another woman gone daffy in her old age!! I've never used sea salt Jo but I do use Kosher salt. Gives food a much nicer flavor than regular old salt and doesn't take nearly as much to season. Patsy Patsy

My daughter just sent me this and it sounds yummy. You could substitute plain yogurt for sour cream and fat reduced mayo. Cucumber Dill Dip 1 medium cucumber 1/4 tsp white pepper 2 tbsp fresh dill, chopped OR 2 tsp dried dill, crushed 1 1/2 cup mayonnaise 3/4 cup sour cream 1/4 cup green bell pepper, diced Peel, seed and finely dice the cucumber. Using a colander, squeeze out any excess water from the cucumber chunks. Place in a bowl and blend will with the pepper and dill. Blend in the remaining ingredients and mix thoroughly. Cover and chill. Makes about 3 cups of dip. MaryW

Another good seasoning is Cavendar's Greek Spice. It's great in soups, stews, and my favorite breakfast dish:toasted Jarlsburg cheese on Stone Ground Brown Bread with calevendars on top, then broiled til slightly brown. Delicious and quick. Very filling. Eileen |

Soon all our tomatoes will be ripening. My husband always plants way too much and my daughter sent me this neat recipe to help use some of them up. Parmesan Pan Fried Tomatoes Ingredients (Yield: 4 servings) 1 cups white flour 1 Tbsp. Onion powder 2 tsp. Granulated garlic 1 tsp. Salt 1/2 tsp. Black pepper, ground 1 cups Parmesan cheese, grated 1 cups breadcrumbs 12 slices Tomatoes, sliced 1/2" thick (3 tomatoes) 2 each Eggs 2 Tbsp. Dijon mustard 3 Tbsp. Olive oil Directions Combine flour, onion powder, granulated garlic, salt and pepper. Mix well. In separate bowl combine panko and parmesan. In third bowl combine eggs and mustard. Take slices of tomato and dip in flour, dust off excess. Then dip in egg mixture, letting excess drip off. Finally dip in parmesan/panko mixture, pressing parmesan mixture onto slices for good coverage. Repeat until all slices are breaded. These should be stored in a single layer dusted lightly with extra crumbs. Heat olive oil in non-stick frying pan, over medium-high heat. Place 3 slices( 1 order) in pan, and let cook about 1 1/2 - 2 minutes on each side, until just golden brown. Don't flip too soon or parmesan mix will fall off. Serve hot. Another good idea is to donate to food banks for those less fortunate. MaryW
