I bought a Brother serger and some of the techniques in the booklet requires the removable stitch finger to be either on or off. What does the stitch finger do?

The stitch finger is what allows the thread to come all the way to the edge without curling the fabric, the stitches form around the the finger, and slide off the back of the finger.

For normal stitches you want it on, so you get a clean edge....a rolled hem, for example, you WANT to curl in, so the stitch finger would be in the "off" position.

Thanks for the info, now I'll know why I will be leaving stitch finger on or taking it off. These boards are very informative.
