I am sewing a straight single stitch, I believe it would be called a top stitch?
Anyway, what is the ''correct'' way to tie the knot at the end?

I don't tie knots. I usually take a couple of backstitches, then I pull the top thread to the back and cut them both off there.

I usually do back stitches too (and my machine has a 'knot' function also).

I usually cut my threads long and thread to the back and tie them off.

Theoretically if you are sewing on top, where it can be seen, you leave your threads long as "Woody" said, then pull the bottom thread and you should see a little loop from the top thread. Take a pin and put it in that loop to get a piece of thread you can pull through and then knot it. If you have a machine that will sew at "0" stitches per inch, you can set your machine at "0" and stitch about three times and it should tie your knot for you.
