Does anyone happen to have a good and rather quick to put together soup recipe for left over turkey?

What my family always liked the best is just made like a veg. beef soup except use chicken broth instead of beef & turkey instead of beef. Use whatever veggies you like. I always put the left over turkey ( after sliceing all I can off for casseroles or etc ) in a big pot covered with water. Boil it until it almost falls off the bones. Makes it easier to get all the meat off. Get all the meat off the bones. Strain the water if you want & use that with chicken broth to cook like potatoes & carrots until done. Then add the meat & what ever canned veggies you want in the soup . Sometimes I add some rice & barley. Let it simmer on the back of the stove. Add whatever seasonings you want. I just add some salt & pepper to taste. This could also be put in a crock pot. Oh, I add some poultry seasoning with the veggies. I usually get the meat off the bones the night before as I hate that job. You can also make turkey noodle soup. Same as chicken noodle. Hope this helps even though I'm late on this. Site was down. Thanks Theresa. You're not late. I just posted this evening. I hate taking the turkey off the bone also. What a mess!!! I'll give your suggestions a try.
