I made something new tonite for supper. We had knishes. Yum, yum. Potato knishes, boiled potato mashed with herbs, egg and bread crumbs. Then you pat them into big fat pancake shapes and bake for about 30 minutes. Jordan ate and ate and ate. I am not to have potato but I had half one just to see what they were like. We will definitely have these again. MaryW

Mary, That sounds yummy. Can we have the measurements for this please ? Also do you pronounce the K? Just not sure how to pronounce it. My mother made potatoe pancakes from mashed potatoes but those were fried. We're not suppose to eat fried foods so this sounds great. Just a tidbit , my grandmother was from your area. her maiden name was Aubuchon. Most likely as common a name as Smith is here. Theresa |

Please, a recipe Mary. DD eats potatoes any form, shape or style. She would love these. When she was a toddler when she wouldn't eat all I had to do was make up some mashed potatoes and she'd eat. Never gained weight either until she joined the Navy.

Good girl Mary -- when I first started reading I thought maybe you were eating potatoes again. Next time why don't you make yourself a treat too -- not that a bit of potato would hurt once in a while. You might be able to find a similar recipe using cauliflower instead of potato. I'm not fond of cauliflower, but sometimes I make a patty out of shreaded zucchini or yellow summer squash. You could probably make knishes out of sweet potatoes or yams just like the potato ones. I think I'm going to try that -- using whole wheat bread crumbs of course. Dorothy |

Potato Knishes: 1 tbsp. oil 1 large onion, minced 2 cloves garlic, minced 1 tbsp. paprika 3-4 potatoes 3 tbsp. chopped herbs, whatever you prefer 1 egg 3-4 tbsp. flour or bread crumbs Preheat oven to 350 deg. F. Peel potatoes and boil until soft. Meanwhile Heat oil and add onion. Cook for about 5 minutes, add garlic and cook another 5 minutes or so. Drain potatoes and return to pan. Cook over heat for a minute or two to evaporate any remaining liquid. Let cool slightly. Mash potatoes in pot. Stir in onion mixture, herbs, egg, with salt and pepper to taste. Mix in flour or bread crumbs. Potato mixture should be thick enough to form with your hands. Wet hands and form potatoes into patties. Nice big ones like burgers. Arrange knishes on greased baking sheet and bake about 30 minutes, turning after 15 minutes. Makes about 8 knishes. MaryW

We make "quick" knishes sometimes using instant herbed mashed potatoes and refrigerated crescent roll dough. Lay a crescent roll triangle flat and plop some warm mashed potatoes in the middle. Then bring the dough corners up to the top and pinch the edges shut around the potatoes. Bake according to the package directions for the crescent rolls (or a little less time). I once cut each piece of dough in half and made mini knishes for a party...they were a hit and super easy to make |

Sounds like there are a lot of different ways of making them. I just know hubby and grandson consumed them in record time. LOL.

Thanks Mary for the recipie...I made some for the kids yesterday and they loved them...I will be making them again... BTW my son loved the sewing machine and we start his lessons tomorrow... I did not finish his PJ's for xmas so that will be our first project...they are already cut and besides i think 7 is too young to be cutting your own patterns but he will put most of it together and then be able to wear it.... My mouth is watering!... I had some about a year ago. DH loves them too. The first ones I ever ate where in Atlantic City on the board walk....Yummy... Mary his one of his favorite foods has alwasy been hotdogs. lol...And just about everytime I speak with him he is eating them. Poor DH..When I get back he may not want to ever see another hot dog.. . I can't blame him either. I am making a menu for the first week. Old fashion home cooking everyday. . He even called me one night and we made a grocery list together. He said that is our first trip when I get home...the grocery store. He said he wants, fried chicken with home made mashed potatoes, early peas and a pan of my homemade buttermilk biscuts..I asked him if he fixed the shower in the guest bathroom yet.. He said he will get around to it. He has been plumbing for over 20 years and our son has been plumbing for about 5. They are considering going into business together. As long as someone fixes that shower. Mary do you have to wait for extended periods of time for repairs. I told him if he does not fix it by the time I get back I am going to call a plumber..
