Help! I'm stuck i can't figure out what to make for dinner. I'm tired of rice. I only have chicken in the fridge what can i make?

What kind of chicken is it? If it's bone-in, you could make chicken cacciatore. If it's boneless, you could make chicken fricasee, or you could pound it out, bread it and fry it (had that the other night...delish!). Another way I like boneless chicken is cubed, then you add pineapple chunks and frozen peas, then make a sauce with chicken broth and pineapple juice, then thicken with cornstarch.

We make what I call 'fake fajitas'...we grill chicken marinated in Lawrys Mesquite (we add extra tequila and lime juice). I chop and cook onions on the stove (adding a bit of sauce at the end). We have flour tortillas (kept warm in the oven).we add refried beans (microwaved),salsa,sour cream and my husband likes to make quacamole.We roll all the stuff up in the tortillas...
(of course living in FL we grill almost all year 'round....)

What did you make? What do you have for tomorrow night? It's never too early to plan. Tell us early and maybe we can give you a little more help. Although GDL had several very delicious suggestions tonight.

What about chicken with red gravy. I love that. Salt and Pepper the chicken and add any other seasonings you might like on top of that, then just brown the chicken with a little olive oil, chop up a little onion and garlic throw that in the pan. After doing that add some Ragu or Prego sauce to the pan cover and cook on a low heat until the chicken is tender about 25 minutes depending on the size of the chicken peices. If the sauce is thick add a little chicken stock or broth. Serve over noodles, rotini or any other pasta. Warm up some crusty bread, butter and dip in the sauce as you eat. Bon Appetite!!!

sorry i didn't get back to u gals yesterdays. I ended up having mash potatoes and chicken with white cooking wine ,sauted onion .
Tonight i might have more chicken this time i have a whole one i might put in the oven and make some vegetable rice with it.

Quick great idea for chicken..
Mix olive oil, lemon juice , and white wine (optional) .. Salt , Pepper, chicken , and sprinkle with crushed oregano.. Pour liquid over and marinate at least one hour.. (overnight is OK) Bake til tender.. This is Greek Style.. you can also dip quartered potatoes in the mixture and bake them along with chicken.. Wash, and quarter lengthwise several potatoes. (.leave skins on)

Libby that sounds good too. I love using olive oil instead of vegetable oil or butter. The potatoes are awesome done that way, I've done mine that way too. If you want to just do up potatos by itself you can preboil them first and it goes quicker.
