I'll go first. A good friend gave this to me, and whenever I make it everyone asks for the recipe.
Broccoli Salad
1 bunch broccoli, finely chopped
1 cup raisins
1 cup sunflower seeds
1 small onion, chopped
1 cup (light) mayonnaise
1/4 cup sugar
1 Tbsp. white or cider vinegar

Combine all ingredients. Refrigerate at least 2 hours or overnight.

This is more of a dessert, but it could pass for fruit! It looks kind of weird, but it tastes like candy. :)

Fruit Salad

1 can fruit cocktail
1 can tropical fruit cocktail
1 can mandarin oranges
1 jar maraschino cherries
1 box vanilla pudding mix, cook and serve (not instant)

Drain the juice from the fruit into a saucepan and add the pudding mix, cook until it just boils. Add the fruit and chill for a few hours.

That's it! You could change what kind of fruit you use. My mom always used to add bananas, but you have to add them fairly close to when you serve it otherwise they turn brown.

Andrea, I have a very similar recipe. Mine calls for cauliflower, celery, zucchini, summer squash, green pepper and even water chestnuts!

Tuna Slaw
Shredded cabbage,carrot
diced celery, green pepper
drained canned tuna
shredded cheddar cheese
zesty Italian dressing

This is basically a coleslaw with tuna and cheese in it. Ingredient amounts can be altered to suit the need, likes. Serve cold.

I have another brocolli recipe, one of our favorites

6 cups broccolli pieces
1 cup raisins
1/2 cup chopped or sliced red onion
1/2 cup sunflower seeds
1 cup mayonnaise
1 cup yogurt, plain
1 cup feta cheese crumbled.

Mix all together and chill for 8 hours.


This is an awesome peanut butter cookie recipie and really easy
1 cup peanut butter
1/2 cup brown sugar
1 egg

roll into balls, bake at 315 degrees 15 minutes - do not overbake!!

Since we seem to be on a brocolli kick, mine is one or two heads brocolli, one head califlower, one bunch cherry tomatoes, ranch dressing, parmensan cheese. Cut brocolli and calif into florets, halve cherry tomotoes, mix all together in large bowl. Add parmensan cheese and ranch dressing, mix well.

This won't be appropriate for a picnic but it is a nice dessert for the summertime. And could be made with WW jello and light Cool Whip.

Crown Jewels

1 – 3 oz package orange jello
1 – 3 oz package cherry jello
1 – 3 oz package lime jello
3 c. boiling water
2 c. cold water
1 c. pineapple juice
¼ c. sugar
1 – 3 oz package lemon jello
1 ½ c. graham wafer crumbs
1/3 c. melted butter or margarine
2 envelopes Dream Whip or 2 c. whipping cream

1st Step: Prepare the 3 flavours of jello separately, using 1 c. of boiling water and ½ c. cold water for each. Pour each flavour into an 8” square pan. Chill until firm or overnight.
2nd Step: Mix pineapple juice & sugar. Heat until sugar is dissolved. Remove from heat. Dissolve lemon jello in hot juice; then add ½ c. cold water. Chill until slightly thickened. Meanwhile, mix crumbs & butter, press into 9”x13” pan.
3rd Step: Cut the firm jello into ½ inch cubes. Then prepare whipped topping as directed; blend with lemon jello. Fold in jello cubes. Pour into pan. Chill at least 5 hours or overnight. Cut & serve.
