daff55odil...yes there are quilts that can be done totally by hand. One is a grandmother's flower garden. It is done with hexagons in various sizes. They are whipped stitched together. There are different methods to do them but I am working on one (very slowly  ) and using the English paper piecing method. Here is a site that gives instructions and has different shapes and patterns.

English Paper Piecing (http://www.cddesigns.com/PaperPiecing/index.html)

Applique is another method that is usually done by hand. You cut out shapes and then hand applique to squares to make a design. There are various methods that can be used. Here is a page that gives some instructions.

Maybe others will be along with other suggestions. Good luck and if you need more help...just come back and post your questions.

Daff550dil,
Are you thinking of piecing a quilt together by hand, or hand quilting a project? Piecing and quilting can both be done by hand or machine. Judy gave some great suggestions for hand piecing some tops together.... Don't forget cathedral windows and yo-yo's. Any pattern can be hand pieced, it will just take a great deal more time.

Large quilts can also be hand pieced and hand quilted in smaller sections and then joined together when finished - this is called Lap Quilting and Georgia Bonestell wrote some books on this method - very portable projects.

If you're a bit more specific, I'm sure we can help you along......
