Me and my hubby are wanting to start canning and i was wondering if anyone had any good recipes or tips or just anything lol!!!! Oh ya does anyone live in Kentucky???? |

When I first started canning years ago (haven't done much recently though) I just bought a canning cook book. It was put out by Kerr. Probably even called the Kerr Canning Cookbook. It worked for me. From time to time if I had questions particular to where I live, I would call the county extension agent - at least that is what they are called here in Montana. They were always helpful. Good luck - I always felt great having on my shelf and using it throughout the year. I did a lot of fruits, tomatoes, chili mix, apple pie mix. Jeke Jay

I made green tomato relish one year. I followed the instructions to a tee. They were far too sweet. I was so disappointed.

I canned red and green salsa last year and man was it hot and spicy when we started using it. DH loved it but it burned my taste buds out only after a couple of dips with chips. Patsy Patsy

It has been a lot of years since I canned, but I too, just bought a canning cookbook. I did go to the local farm co-op to purchase canning supplies though-cheaper than in the regular stores

I used to can our green beans, tomatoes, and vegetable soup mix, but haven't in a couple of years. I made dill pickles this summer. Last year I made "apple rings" that are actually cucumbers sliced with a hole in the middle so it looks like apple rings. I used the last of our cucumbers when they were too big for salads and turning slightly yellow. They're flavored with red hot candies and colored bright red. Some people here call them Christmas pickles. |

I wanted to add that I love to make jam. I think it really costs more to make it than buying it in a store, but it's so good! I like to combine different fruits together. My kids love triple berry (strawberry/blackberry/blueberry). Hubby's aunt loves the peach/strawberry jam that I made. I just follow the directions on the fruit pectin box and sometimes substitute similair fruits for part of the mix. My MIL makes jelly every year. She doesn't use pectin, but I've never had any luck making jelly or jam without it. Hers is perfect every time. She says she can tell when it's ready by the way it drips from the spoon. She told me how to make pear preserves one year and my turned out like chewy candy. |
