I'm making a checkerboard cake tonight/tomorrow and have a couple of questions.
1. Is it easier to fill the sections of the checkerboard rings using one of those "cake bags" (Kath will know what I'm talking about) or just be careful and use a spoon?
2. If I should use a "cake bag" can I make one out of a baggie and just cut one of the corners off??
3. What's the best way to get the layers even? Most of the time I take the bottom layer of a cake and turn it upside down and layer the second layer right side up on top of it. But this cake has three layers. How do the professionals get their cake layers to be even? Are the tops of the cakes (the rounded part) cut off before putting them together so they lay evenly on top of each other?

I use a length of dental floss to cut off the rounded top of a cake layer to make it flat.
A zip lock bag with one corner cut off does make a good pastry bag for things like that. I use one sometimes for filling deviled eggs or other things like that don't require icing tips if I'm out of parchment triangles. Be sure to fold the sides over as you fill it and it will be easier to seal it. Press the air out before sealing it.
I like the checker board cakes. :bluesmile I haven't thought of those in a while. My daughter would love it for her birthday next month.
What colors/flavors will your cake be?

Bama, I thought about doing different colors but couldn't find exactly what I was looking for and too lazy to go to different stores. I knew I'd be up late last night making snickerdoodles (which I was) and our dd has started running a fever so I didn't want to be gone too long. My dh isn't feeling to great either which was more of a reason to get home sooner than later - ya know how men are when they're sick.......
Is it a mother's curse or fortune that everyone else can get sick except us??
I'd like to do pink and white for my dd's 4th birthday.

Oh yes, I know how men are when they're sick. :yawn: I hope your dd is feeling better. (and your dh too!)
Pink and white will be pretty. I'm thinking of doing pink and devil's food for my daughter's birthday in January. She likes pink and black together.
I'm glad you posted about the checker board cakes. I don't have the special pan for it, but I made one years ago where you make paper circle templates and cut each round layer into 3 circles, then re-assemble them into the checker board pattern. You cut one outer ring, an inner ring, and a middle circle. Does that make sense? I can see it, but can't explain it well.
