Ever since Maureen came on with her egg white dilema I have been craving coconut macaroons. I can't seem to find a recipe for them. I have googled it but I get a bunch of things with flour or premade cookie or cake mix in them. I know the ingredients to be egg white, sugar, coconut, and I believe caro syrup but I can't find a recipe that matches that and I have no clue what the ratio is. Help please!!!! Gina

Found a recipe last night before I went to bed. Turns out that I like them the way the German's do it. I am gonna clean up the kitchen now and take a wack at them.

Well I would share if there were a way to send them over the internet. They are in the oven right now. I think I messed them up though cause they were spreading out not staying in little mounds. Oh well who cares what they look like as long as they taste good.

How about sharing your recipe? I love coconut but my family doesn't so I don't get it much.

Here is how I made them. Pre-Heat Oven to 250 4 egg whites 1/4 tsp cream of tartar 1 cup of sugar 1/2 tsp lemon extract (gonna bump this up to 1 tsp next time) Can use anything Vanilla\Almond\Mint extract or nothing here . 3 cups shredded coconut (I might use more next time) I whipped the egg whites and cream of tartar in my Sunbeam mixer on the egg white setting (the highest). When it got to the point that I could draw a line in it with the end of my spoon, and have the line stay, I slowly added the sugar still mixing on the highest setting. Then I added the lemon extract. I whipped it for a while longer while I put parchment paper on my baking sheets. I was looking for firm peaks, but I don't know what those look like and I was antsy to eat some so I said good enough. The recipe I had said to fold in the coconut by hand but since my mixer has a fold setting I used that. Then I dropped spoonfuls onto the parchement paper and put them in the oven for 20 minutes. My spoonfuls were huge so this was not enough time. The cookies should be dry and peel right off the paper but some of mine were still gooey in the middle so they didn't peel well. Place them on a rack to cool then store them at room temp in an airtight container. Enjoy!!! Gina

I made some around Christmas time and mine also spread out on the pan. They were difficult to remove from the cookies sheet. They didn't look at all what they should have looked like, but they were chewy and delicious. Even my kids, who don't usually like coconut, loved them. They were too ugly to take to a Christmas party. I haven't tried them again, but now I want to. YUM. They would be even better with the bottoms dipped in chocolate. |

Bama, Did you line your cookie sheets with parchment paper? I had no problem getting mine off other then the gooey middles. Gina

In the UK coconut macaroons are baked on rice paper - then you don't have to do the peeling off, you just eat it with the mac. It's no good, I will have to make some now! I'm the only one at home who eats coconut so I'll have to take them to share in the office. I'll dig out the recipe book tomorrow and see how it compares with the one you have on here. |

Gina, I didn't have any parchment paper, so I tried using Reynold's no stick foil. It didn't work well. Next time I will use parchment paper. |

Just thought I would share that it is true that you shouldn't try to make them when there is humidity in the air. I made some the other day when it was rainy and they were a sticky glommy mess.
