Remember that on the old Hee Haw shows? I thought it might be fun to see what everyone's cooking for dinner. I have Hobo dinners in the oven. (Lean ground beef patties topped with onions and potatoes and wrapped in foil) We'll have a salad with it and mac-n-cheese for my vegetarian son. I like having things that are quick and easy this time of year so I have time to do other things. So.... what's for dinner at your house? |

We are having Baked boneless skinless chicken breasts, Baked potatoes, corn & homeade chocolate chip cookies for dessert. Grandsons came over after school to make cookies to take to school tomorrow for Kindergarten awards & 3rd grader has a summer Bday so he is taking them to celebrate now. 3rd grader has extras for the teachers who keep begging me to bring them in ( I used to work there & took them monthly). It's not even close to dinner time for me but you're making me all hungry! Unfortunately it's pizza for us tonight as it's ds's birthday and his choice. Dessert will be a cake made from Krispy Kreme donuts. I'm sure I'll be feeling fresh and energetic tomorrow. Not! I'd much rather be coming to almost any of your houses - I'm the only vege lover in our house and so our vege dishes/accompaniments tend to be pretty boring as I refuse to cook two meals. I have to say though - the Hobo dinner sounds a bit interesting - can you tell me more Bama? I'm also a bit of an onion freak. Pauline

Ough sounds good everyone. I had lean ground beef patties, with onions, salad and my husband also had cream corn I can't have that so I just had the meat and salad. For desert I had strawberries chopped with splenda, he had a piece of cheesecake. Now I'm hungry and it's 1:33am so I'm off of here and going to bed.
I'm regressing back into my youth, I just have to figure out how I'm going to convience my body to come along with me.

Last night it was whatever you could find and wanted to eat. I had a Frozen "rib" sandwich from Tony Roma with chips and water. One DD had a fresh veggie combo and water. The other DD ate at VBS and I'm not sure what DH had. I drove 3 hours to Atlanta Airport and 3 hours back with a 2 1/2 hour hang around yesterday so I was not cooking when I got home at 6. Tonight we will probably have Southwestern Skillet Sensations. Beans, corn, diced potatoes, eggs, and cheese. |

I have to say though - the Hobo dinner sounds a bit interesting - can you tell me more Bama? I'm also a bit of an onion freak. It's kind of like little meatloaf dinners. Take about 1 1/2 pounds of lean ground beef. Sometimes I mix in about 1/2 cup chopped onion and 1/2 cup chopped bell pepper, sometimes I leave it out. I add a handful of saltine cracker crumbs to help hold it together. Add salt, pepper, Cajun seasoning, or whatever seasonings you like. Last night I added 1/2 cup shredded cheddar cheese to the ground beef. Form into 4 or 5 patties or small loaves. Place on separate sheets of foil. On top of meat patties place vegetables, your choice. (onion slices, thinly sliced potatoes, carrots, peppers) It's also good with ketchup or steak sauce topped over the meat. Sprinkle veggies with salt or other seasonings and fold foil around meat and vegetables and seal. Place foil packets onto cookie sheet. Bake at 375 F for 45 minutes to 1 hour or til meat reaches 180 F and veggies are tender. Be careful opening foil packets. Easy clean up! I don't know what's for dinner tonight yet, but my MIL and I are going to lunch at a new Chinese restaurant. |

My MIL makes "Hobo Stew". It's smoked sausage, whole potatoes, onions, and corn on the cob boiled with a bag of crab boil seasoning. She makes it when she doesn't have any seafood to throw into the pot. The corn and potatoes are my favorite part of a crab or shrimp boil anyway. |

Last night DS grilled ribs for us.. Used a new method called 3-2-1 and they were so tender and juicy -----UMMMMMMM Good.........I should have said yesterday in the afternoon and evening.. 3 2 1 adds up to 6 hrs cooking time in all .. But the 3 hr part is at 275 degrees.. I think the whole process is great... Best ribs he has ever fixed.. He loves the Food Network so I'll bet the recipe came from there.. He's not here to ask..

All those sound so scrumptious. I think we should have a recipe swap, post a new recipe twice a month lol. I know the North and South have different ideas when it comes to food. I sure would like new ideas, I get burned out on the every day food I cook. It would be nice to share our recipes. I love Mexican food too. My trip to the Chinese restaurant with my MIL today turned into Mexican instead. She said she was craving something spicy. Fine by me. I like both. I think a recipe swap would be fun. It's interesting to see what people from different areas cook/eat most often. Tonight it is Caesar salad (from a bag!) with turkey from the grocery store deli. And I can't tell a lie! What I said we had the other night we had tonight. With the remodel tossing everything on it's butt my plans end up in the bucket often. We love Mexican food too but are often disappointed at the quality of food that you get in a lot of the restaurants. There are probably less than four or five (out of the couple of dozen we've tried) that were any good. Mostly they're a bit bland and samey. I guess you guys have a better standard there because there'd be so many more skilled cooks. I make mexican a fair bit at home (too often for the waistline that's for sure) because dh works for General Mills who are the manufacturers of Old El Paso - the biggest mexican food producer here anyway. Love the idea of a recipe swap. Pauline

Well, I've been cooking for 1 lately with DH gone on a business trip for the last 2 weeks. Yesterday and today are burrito days -- last night I sauteed some zucchini and yellow squash, green pepper and mushrooms with garlic and seasoned them with chili powder and cumin. Put that in a big tortilla with refried beans and peach salsa (ok, a little weird, but they were out of my favorite pineapple salsa). It turned out pretty well. I try to take advantage of times when DH is gone to eat things he wouldn't like -- he hates mushrooms and is not too fond of peppers. He prefers tacos with just meat (well, boca ground burger anyway) and cheese, anyway.

Thanks for the recipe Bama. When asked what was for tea last night, I told them all it was International night, and to get used to it. I made Hobo Stew for tea last night and they all loved it. Served it on a bed of creamy mash potatoes. It feels like the first time in ages that I have made something that one of the monsters hasn't whinged about. Unless it is take-away of course. For some reason the whole family is going through a stage of fussy eating, and it is driving me crazy. I would love the idea of a recipe swap. It might make my nights a bit easier for a while. My kids used to love teddy bear shaped pancakes or really tiny pancakes. As teenagers, they still want me to make "baby pancakes". My sister used to cut the kid's sandwiches with cookie cutters to get them to eat them. Tonight it's cubed steak, roasted potatoes, green beans, squash, and cornbread. |

Yummy Kaitlin! That's my favorite dessert. BTW, you're a vegetarian, right? I'd love to hear some new recipe ideas for protein sources for vegetarians. My 18yo old is a vegetarian (he does eat diary and eggs) and I'm tired of seeing him eat mac and cheese, grilled cheese sandwiches, or peanut butter sandwiches all the time. I think he would live on those if I let him. Those and potatoes, raw broccoli, and corn. He doesn't like beans. He said he might be willing to try tofu. I made Boca Burgers tonight along with the cubed steak, but he wouldn't touch them. I love Boca Burgers myself. I'm going to try making roasted green beans for him tomorrow and see if he likes them. Not that there's much protein in green beans, it would just be something new. |

Bama, my YD became a vegatarian in high school. He teacher showed them a video of how they raise cattle and chickens and that made her so upset she stopped eating anything that was produced by them. So I would research for food to make her and cook for the rest of the family. She didn't eat cheese or dairy so I was always at a lost of food to give her. Tonight I had to work durning dinner time so I had a salad with all the goodies, water, and pita bread. Summer

Our Oklahoma Mamma invited dh and I for dinner tonight and she made chicken spaghetti (yummy), mixed veggies (again yummy), hot rolls, a wonderful jello salad and I made a sugar free chocolate dream pie. Bama -- I've been a vegetarian for 10 years now, so I've come up with a few solutions. Eggs, milk, yogurt, and cottage cheese are good sources, so if he's a good milk drinker you don't have to worry too much. I know my little brother could drink a gallon a day when he was in high school. There are lots of meat substitutes out there that are quite yummy -- I didn't like boca burgers at first either because they tasted too much like meat for me, but there are lot of other options that are more like vegetable patties than meat substitutes. Boca, Gardenburger, and Morningstar Farms have a lot of different varieties -- a few that I like are original Gardenburgers, Morningstar Farms pizza burgers, and chik patties (but they may be a little too much like chicken..). Tofu is great, but it can be a little tricky to prepare. One of our favorite tofu meals is barbecued tofu. The recipe is pretty simple: 1 pound firm tofu (the kind packed in water and refrigerated, NOT silken) 1 tablespoon peanut butter 1 tablespoon soy sauce 2 cloves minced garlic ~1/4 cup water Your favorite barbecue sauce (we use Sweet Baby Ray's honey barbecue) I like the freeze the tofu and then thaw it -- it gives it a chewier texture, but you can use it right out of the package. Preheat the oven to 400. It is important to press out as much water as you can from the tofu with paper or cloth towels -- this helps it absorb more of the sauce. Then, mix together the peanut butter, soy sauce, garlic and water in a small bowl. Slice the tofu into as many pieces as you want (we do 8 per pound) and lay them out on a cookie sheet. Spread the sauce mixture on each side of the tofu and press it in. Then spread barbecue sauce on. Bake for 10 minutes, then turn and spread on my BBQ sauce. Repeat one or two more times until the tofu seems "saucy" enough We have it on hamburger buns or rolls with potatoes, corn, or small salads on the side. Tofu is also really good stir fried -- don't freeze it first, but do press out the water. You can even marinate it ahead of time, but we haven't experimented with that yet. There are also other things like tempeh and seitan, but I haven't experimented with them yet. Nuts are also a good source of protein -- we like to throw walnuts in stir fry and with pasta. He might like beans prepared different ways -- refried beans are yummy in burritos and tacos, and its easy to make hummus from chickpeas. I have a super easy veggie chili with 3 different types of beans (black, kidney and refried pinto beans) that I like to make and freeze. I can post the recipe if you like, but this is getting rather long. Anyway, I hope this helps somewhat. I can definitely relate to cooking vegetarian with a picky eater at home -- DH doesn't like a lot of "weird" vegetables, but I'm really lucky that he does want to eat vegetarian at home since he wasn't a vegetarian when we met. http://www.sew-whats-up.com - the new home for Sew What's New

Yes, that helps a lot. Thanks! I think I'll try the bar-b-que tofu. We use Sweet Baby Ray's sauce too. It's wonderful. I like the sound of the peanut butter in it too. I'd like to have your chili recipe too, when you get time. No hurry, it's a little hot here for chili right now, but I think it sounds good. DD and I eat veggie burgers a lot. love the black bean burgers. I think we could pretty much be vegetarians too if I didn't have to cook meat for my husband. DD will eat almost any type of vegetable. We have bean burritos pretty often here. Everyone loves them except for my son. He just doesn't like beans. He does love peanut butter, smoked almonds, milk ( going through a gallon a day since school let out) and he really loves yogurt, so that makes me feel better. We've always worried that he's not getting enough protein tho. Maybe he is after all. I always feel bad when we grill because he usually won't eat anything except the corn on the cob, so I'm going to try the bar-b-qued tofu. Do you think it would work well on the grill? |

Tonight I made DH & son a frozen pizza & I ate Lipton Buttered Noodles & fudge swirl ice cream. I am still eating soft foods. Too hard to chew until my mouth heals from Wed. dental work. I have been eating rice, eggs, & pasta a lot. I am ready for a hamburger or some chicken!!!!

Bama, the BBQ tofu might work on the grill -- it might be best on a piece of aluminum foil sprayed with cooking spray, since the tofu might tend to stick. It doesn't really need to be heated to a particular temperature, so it just might work. Let me know if you try it! Another thing you might try is making shakes with whey protein -- I've never tried it, but my little brother who's into weight lifting is always doing that. I've made quite a bit of yogurt since I first started. I've had a bit of trouble getting it to just the right consistency, but I think it's a little better now. I haven't really done any chaining yet, but I do freeze half my starter cup and use it for the next batch. I thought that freezing would kill the bacteria, but it seems to work out ok. Mmmm. Sounds yummy Jan. I have some sugar free caramel sauce and some vanilla yogurt in the frig. I'll have to try that. My favorite now is vanilla yogurt with fresh strawberries or bananas and a little Special K Chocolaty Delight cereal sprinkled on top. Kaitlin, I'll let you know if I try grilling the tofu. Hubby got a new gas grill for Father's Day. He usually likes to grill with charcoal, but now I might be willing to grill since it will be easier and a lot less messy. We went to the grocery store this afternoon to get things to grill for tomorrow and I totally forgot about the tofu. I can't always focus when I have my husband shopping with me. It's like having one of the kids with me. Tonight my kids had grilled cheese sandwiches, I had a black bean burger, and hubby got a Subway sandwich on the way out of the grocery store. I didn't feel like cooking. |

Today is a classic Sunday Roast in honour of Fathers Day -chicken with sage and onion stuffing, roast red onions, parsnip and potatoes, fresh carrots and green beans and mushrooms and gravy. Strawberries and fromage frais to follow. The girls made Tony a cake in the shape of a Dalek for Fathers Day - looked fantastic but it is so sickly we all gave up eating it.
