I'll take a stab at it.

As far as I know, serging and overlock are the same. Overlock is the most common stitch done on a serger, the familiar trimmed, stitche, and overcast that you see in RTW. Obviously there are other stitches you can do on a serger, and perhaps one could say they are all "serging." But usually when someone just says "serge" without describing the exact stitch, the overlock is what is understood. And there are different variations of overlock, 2 thread, 3 thread, 4 thread, narrow, wide, but those are all "overlock."

Interlock is a type of knit fabric. Cotton interlock is used for T-shirts, etc.

Edge stitch, as the name implies, is done on the very edge, just a "needle thread" away from the edge. Top stitching can be any width you want, but typically it is 1/4 inch away from the edge. In making a shirt collar, you might use them both. first edge stitch around the very outside edge of the stitched and turned collar. Then do it again 1/4" away from the first stitching, likely using the presser foot as a guide for the width.

I have heard people use the term top stitch to refer to the edge stitch, but that is not actually the correct use.
